Nourishing & Nurturing Vegetable Soup
Serves 4-6
Ingredients:
- 3 tbs olive oil
- 1 diced onion, diced
- ½ sweet potato, diced
- 1 small carrot, diced
- 1 celery stick, diced
- 1 small zucchini, diced
- 1 cup chopped spinach
- 2 tbs pearl barley
- 3 cloves of garlic
- 2 tomatoes
- 1.75lt Massel vegetable stock or 2.5tbs homemade paste in 1.75lt water
- 1 bay leaf
- 2 tbs tomato paste
- 400g brown lentils or cannellini beans (or half of each)
- Handful of flat parsley, basil and thyme
- 1 tsp tamari sauce
METHOD:
- Heat oil in large saucepan and add onion and garlic
- Saute’ for a few minutes until onion is translucent
- Add sweet potato, carrot, celery, spinach, zucchini, barley and cook for about 10 minutes
- Add stock and bay leaf and bring to the boil over medium heat
- Add tomato paste
- Reduce the heat to low-med and cook uncovered for 45 minutes, stirring occasionally
- Add the legumes, then reduce heat to low and cook for 10 minutes, stirring occasionally
- Stir in the parsley and tamari
