Nourishing & Nurturing Vegetable Soup

Serves 4-6

Ingredients:

  • 3 tbs olive oil
  • 1 diced onion, diced
  • ½ sweet potato, diced
  • 1 small carrot, diced
  • 1 celery stick, diced
  • 1 small zucchini, diced
  • 1 cup chopped spinach
  • 2 tbs pearl barley
  • 3 cloves of garlic
  • 2 tomatoes
  • 1.75lt Massel vegetable stock or 2.5tbs homemade paste in 1.75lt water
  • 1 bay leaf
  • 2 tbs tomato paste
  • 400g brown lentils or cannellini beans (or half of each)
  • Handful of flat parsley, basil and thyme
  • 1 tsp tamari sauce

METHOD:

  1. Heat oil in large saucepan and add onion and garlic
  2. Saute’ for a few minutes until onion is translucent
  3. Add sweet potato, carrot, celery, spinach, zucchini, barley and cook for about 10 minutes
  4. Add stock and bay leaf and bring to the boil over medium heat
  5. Add tomato paste
  6. Reduce the heat to low-med and cook uncovered for 45 minutes, stirring occasionally
  7. Add the legumes, then reduce heat to low and cook for 10 minutes, stirring occasionally
  8. Stir in the parsley and tamari
