Summer is the best time to consume salads! This salad is an old favourite of mine, passed down from mum. A combination of fresh homegrown tomatoes, coriander and chickpeas. Perfect alongside a main meal and as lunch the next day. Recipe I don’t have exact measurements, it’s all to taste…I don’t always follow recipes closely.


  • 1 can of chickpeas (or dried chickpeas soaked and cooked)
  • Tomatoes
  • 1/2 bunch if coriander
  • 1/4 red onion finely sliced


  • Olive oil
  • White balsamic vinegar
  • Salt and pepper to taste
